The Oistins Fish Fry at Oistins Bay Gardens in Christ Church is the most famous weekly party in Barbados, with Friday nights the headline event. Long lines of small stalls grill fresh snapper, marlin, tuna, mahi-mahi and flying fish, served with macaroni pie, rice and peas, breadfruit and coleslaw. Crowds of locals and visitors mix under string lights, soca and reggae pumps from the speakers, and the rum punch and Banks beer flow. It is also open on Saturday nights, but Friday remains the unmissable Bajan experience.

What it is

The Oistins Fish Fry is a weekly outdoor street food event at Oistins Bay Gardens in Christ Church — dozens of stalls grilling fresh-caught fish to order, served on concrete tables with cold Banks beer, rum, and live music.

When to go

Open every night of the week but Friday is the main event. Saturday runs a close second. Things ramp up around 7pm and continue until midnight or later. Cash is preferred at most stalls.

What to order

Flying fish, marlin, tuna, and lobster are the standard catches. Pat's Place and Uncle George's have the longest-standing reputations, but most stalls serve excellent plates. Sides include macaroni pie, rice and peas, salad, and breadfruit.
